Rinse poha in a strainer under running water. Let it sit to soften and add pinch of salt and turmeric.
- Step 2:
Heat oil in a pan. Add mustard seeds and let them splutter.
- Step 3:
Add curry leaves, peanuts and green chili. Sauté for 30 seconds.
- Step 4:
Add chopped onions and cook until translucent.
- Step 5:
Add chopped capsicum, tomato and paneer (optional) and cook for 2 minutes, retaining some crunch.
- Step 6:
Add turmeric, red chili powder, coriander powder, and salt. Mix well.
- Step 7:
Add poha, sprinkle water if dry, and toss gently to mix.
- Step 8:
Add more roasted peanuts, garam masala and lemon juice.
- Step 9:
Garnish with chopped coriander. Serve hot!
